Dei Moines Register Paqt) 1 A Doctor's Notebook Mrs. Johnson and Sons 1 Topping Keeps Fruit Cake From Drying Out By lima Phillips Stewart. Fruit cake dries out if not taken care of properly. Using a corn syrup or honey glaze helps, and, of course, one should use proper storage methods. Almond pasta topping is very popular for fruit cakes.

There Is no special trick in making: it. It does wonders to help keep the cake from drying out and, of course, adda flavor too. Almond Paste Topping. 1 cup blanched almonds 1 cup sifted confectioners' sugar 1 egg white, unbeaten few drops of almond extract 1 and one-half cups sifted confectioners' sugar tablespoons melted butter 1 tablespoon hot milk one-half teaspoon vanilla extract Method: almonds through food grinder using your Inert "blade. (You mty wish to do this twice.) X.

Combine ground almonds with the cup of confectioners' sugar, unbeaten egg whits and almond extract. Mix well. Spread over cake. Too Many False Notions About Epilepsy By Glen B. Shepherd, BL D.

Although two million people in the United States have it, too many people don't know the truth about epilepsy. The false notions about this disability hurt epileptics needlessly both job-wise and socially. Epileptics are not leu intelligent than other people. They are not insane. The opposite is true.

Nearly all epileptics have normal intelligence. About as large a percentage of epileptic have superior telllgence aa do other people. Epilepsy is not a disease of "fits" although the word itself does mean seizures. It was so named when only by the seizures could epilepsy be recognised. Many epileptics have no fita or seizures.

They merely have brief moments of daze which may not be visible to others. There are also other symptoms which doctors call epileptic equivalents. Parents or other ancestors are not responsible for a child's epilepsy. Most epilepsy doea not disable the sufferer when properly treated. Moat epileptics can carry through with regular public schooling.

Occasional Attacks. Those wno have seizures may have occasional attacks even with good treatment. They should not pilot airplanes, drive other vehicles, or work In high places and around unprotected machinery. Those epileptics who rarely have seizures while taking medicine can do good work. The usual kind of epilepsy Is caused by diffuse damage to the nervous system.

This occurs early In life, sometimes because of birth difficulties. Controlled by Drugs. In the last few years, a number of synthetic drugs have controlled epileptic seizures better than previous treatment ad. However, the best treatment in any particular person often has to be found by trying various medicines. There is no one drug which will absolutely control seizures In everyone.

Too many people sin against epileptics by discriminating against them and by surrounding this common disease with a wholly false condemnation. Medical courtesy what doctors pay for their own medical care Is discussed by Doctor Shepherd in his Sunday column. Read the doctor's column each Sunday, Tuesday and Thursday In the women's section of The Register. 8. Mix together the l1, cups of sifted confectioners' sugar, melted butter, milk and vanilla extract.

Spread over cake. Decorate if you wish, Choosing Cake Pans. Just because a recipe calls for a tube pan, you do not have to bake your fruit cake in one. In fact many people have trouble with them. One reason why tube pans are suggested is that the width of the batter is no greater than in a loaf pan because the tube cuts mjjiiiii I linn ijlMT' ijrtl mmjmi the width of the pan.

If you have had trouble with tube pans, be sure to line the tube portion with paper as well as the sides. If cake aeems to bake too fast, Increase the number of liners used and keep your temperature down around 250 degrees F. Ms. Richard T. Johnson, 2209 Thirty-sixth is pictured with her three sons, left to right, Richard, Uregory and Larry.

The boys are the grandsons of Mr. and Mrs. Qua Simon ef Orion, and Mr. and Mrs. of Oeneseo, 111.

If you choose loaf pans, use quite narrow ones so the cake will be done in the center without burning the edges. What we call a sandwich bread loaf pan is Ideal, Consistory If you have tried all of the ideas which I have suggested and tpi have dry fruit cake, I suggest you try baking it In glass casseroles which, have lids. Your cake won't dry out then, unless your cake batter is on the dry side. Fruit Cake Tips. Light fruit cakes can be baked at a higher temperature than the average dark fruit cake.

Unless you have a large percentage of fruit and nuts, they nay sink to the bottom of the pan. Warm fruit and nuts first, and they are not so apt to sink. Steam 1 pound fruit cake 1 hour; 2 pound cakes, 2V hours; 8 pound cakes, 3 hours. Remove paper from top of pans and bake In a slow oven, 290 degrees F. Average a half hour for a pound cake, 49 minutes for a 2-pound cake.

Since this baking time is slightly on the "guess" side, you can tell when a fruit cake Is baked by: cake shrinks from sides of pan, a tester put in the middle of the cake comes out clean, your finger tips do not leave an Imprint on the surface of the cake. A combination of nuts such as pecans, almonds and English walnut Is good In any cake. Warming them first helps to bring out their good flavor. If dates and cherries si's soft, leave them whole. For' easier slicing, chill your fruit cake, and.

use a thin bread knife with a narrow saw-tooth edge. Remove baking paper after cake is firm, enough to handle. If paper has been properly treated, it ahould puU off easily. Cakes may be wrapped In cloths soaked in grape Juice, wine or strained orange juice. For better baking, choose a large pan for water, not a small one.

This gives more moisture, which naturally makes a more moist cake. i If your fruit cakes have been drying out on top before they are done, start them out with a waxed paper over tho top, held down with string. Have the paper high enough so that the batter not touch It in rising. Wrap fruit cake In foil, slip into a tin box and then store In cool, dry place. If you don't have a cool room, place foil-wrapped ciks in a pliofilm bag and freeze.

Cake thaws out in a very short time after it is removed from freezer. Visitor Returns To California Mrs. Hamilton Carpenter of La Jolla, who spent several weeks with her sister-in-law, Mrs. R. J.
